Gluten Free and Beyond….

I decided to start a blog to keep track of my Gluten Free experiences. From the trial and error in the kitchen to the ups and downs of being a Celiac. This will definitely be a canvas for my thoughts and opinions. I am looking forward to showcasing my kitchen creations as well as discussing anything and everything related to Celiac Disease.

Almost 10 years ago I was diagnosed with Celiac Disease. That changed my life.
Long gone is the ease of eating whatever looks desirable. But, I do welcome the healthy change in my body. For me, reading food labels has now become second nature. I don't think about it. I just do it. Grocery shopping is an event but has gotten easier with a wider range of Gluten Free products available. Personally, The Real Canadian Superstore makes GF shopping somewhat of a joy. There’s nothing like finding all of your GF food choices laid out in one aisle! This saves time and prevents frustration. Even eating a restaurant has become less scary although, three bad experiences at one establishment cross them off my list for good, but that’s for another post.

Following a strict Gluten Free diet can be intimidating and expensive but it has taught me to be patient and creative. Often times I simply cannot find a Gluten Free product that I would like to eat This results in a homemade version a la myself. Sometimes it turns out well and sometimes it becomes a learning experience. Either way I try to keep a fun and no worries approach in my Celiac friendly kitchen.


And so my online journey begins….
